"If we analyze the basic characteristics of hummus, it is easy to see how they are mostly determined by the main ingredient: chickpeas. As is known, legumes are the richest vegetables in protein, but chickpeas are distinguished from peas, beans and lentils because, in addition to providing high quantities of protein substances, these are of better quality, due to the greater presence of all the amino acids called essential because our body cannot make them on its own. Of course, the combination with cereals (focaccia bread, etc.) remains the best for the perfect integration of chickpea proteins with those of wheat, but even when consumed alone, hummus effectively contributes to raising the pool of essential amino acids present in the 'body.

Chickpeas also contain a good amount of starch, which makes them an easily assimilable source of energy, and provide a significant amount of precious minerals, first of all iron and potassium, the latter very useful for muscle tone and control of blood pressure.

As for fats, chickpeas contain a greater quantity than other legumes (with the exception of soy), but these are "good" fats especially polyunsaturated, which in addition to positively affect the lipid profile of the blood (they tend to counteract the accumulation of cholesterol and triglycerides), pleasantly affect both taste and texture, making hummus so velvety and tasty.
